Thinh has spent years perfecting his roast at Phin Lab Roastery on Cẩm Kim Island, now supplying wholesale beans to cafés across Vietnam, from Hà Nội to Phong Nha to Hội An.

Meet Thinh // Phin’s Founder & Roaster

Before Phin Coffee became one of the most loved coffee shops in Hội An, Thinh spent years working as a tour leader, guiding travelers through Vietnam, Laos, and Cambodia.

“My job wasn’t just to show people places,” Thinh says. “It was to create meaningful experiences, introducing guests to local food, culture, and everyday life, so they could find the authentic side of each destination.”

That instinct is what led him to coffee. In 2017, Thinh opened Phin Coffee with the same idea that guided his years on the road: real hospitality means sharing something true. He now roasts every batch himself at Phin Lab Roastery on Cẩm Kim Island, sourcing beans and working directly with the stories, traditions, and heritage behind each cup.

We did the coffee class with Hi, and we loved it. Very informative and it was delicious. I definitely recommend when you come to Hoi an😌

We did the one hour coffee class today with Hi, it was great! Hi was super passionate and informative and it was a very hands on class where we got to prepare 4 different types of coffee ourselves! Would recommend to all coffee lovers (and non coffee lovers, my partner had chocolate instead of espresso as he doesn’t like coffee!)

Xuyen Pham
Chef

Young, creative, and always experimenting, Chef Xuyen leads the kitchen behind Phin Coffee’s menu, blending Vietnamese tradition with new ideas guests won’t find anywhere else in Hội An. Trained in Vietnamese cooking but never boxed in by it, Xuyen builds dishes that respect where they come from while still surprising guests.

Trained under Chef Xuyen, Danh took the lead at Phin Lounge when it was time for the kitchen to grow into its own. Detail oriented with a sharp eye for garnish, he brings precision to every plate that leaves the kitchen. That attention shows up across the Phin Lounge menu, dishes built to look as good as they taste, plated with the same care every time.

Dong Bui
Sous Chef

Behind every dish that leaves the kitchen, there’s a team making sure it gets there right. Đông Bùi is a big part of that at Phin Coffee.

As sous chef, Đông works closely with the head chef, handling prep, keeping the kitchen organized, and stepping in wherever the kitchen needs an extra set of hands.

Absolutely beautiful food. The duck pho and the wontons are insane.

The duck salad was absolutely delicious, the duck was so tender & the salad dressing was fabulous. And let’s not forget the setting, the gardens are lovely. I’ll be back for sure.

The best food in Hoi An! Perfect mix of local and international flavours and every fusion in between. Pesto duck fusion may be the best thing i ever ate! Also incredible variety on coffee menu, I just wish i had time to try them all. Beautiful spacious environment whether youve got some casual work to get done on a laptop or just want to relax and read a book or hang out with friends. Would happily spend the whole day here and very sad to leave
