We source from coffee growing regions across Vietnam, Cầu Đất in Đà Lạt, Gia Lai, Pleiku, each one with its own soil, its own variety, its own story. Mr. Diệp, Mr. Phước, and Châu, farmers we’ve worked with for years.

Processing

After harvest, the coffee cherries go to processing, where they’re cleaned, sorted, and fermented. We use different processing methods depending on the bean. Most of what we work with is washed or honey processed. Washed coffee has the fruit fully removed before drying, leaving a cleaner, brighter cup with more clarity in the flavor. Honey processed coffee keeps some of the fruit’s mucilage on the bean during drying, which adds more body and a natural sweetness to the final cup

Roasting

All roasting happens at Phin Lab Roastery,

A working roastery on Cẩm Kim Island led by Thinh, our founder.

Our main Arabica and Robusta are roasted medium, built for the everyday cup. For beans like Red Bourbon, Heirloom Ethiopia, and our Fine Robusta, we roast light instead, to hold onto more of the bean’s natural character.

Roast times, temperature, and humidity are tracked closely throughout, so each profile stays consistent every time it’s roasted.

Our store

You can visit any of our locations and try coffee brewed a few different ways: espresso, hand brewed through a phin filter or V60, and cold brew. 

Our beans also come in 250g bags, available at all of our locations. If you’d like yours ground, just let the barista know how you’re brewing, and they’ll grind it to match.

Espresso

Made with our Arabica medium roast, pulled for a balanced, full bodied shot.

Cold Brew

Brewed slow with whatever light roast we currently have on rotation, right now that’s our Fine Robusta.

Coconut Coffee

Egg coffee, peanut butter coffee, cà sữa đá, bạc xỉu, all built on our Robusta medium roast for the strength these drinks are known for.

Latte & Other Espresso Based Drinks

Built on the same Arabica medium roast as our espresso, for a smooth, balanced cup with milk.
