Egg Coffee (Cà Phê Trứng) isn’t just a drink—it’s a symbol of Vietnamese creativity. Born in 1946 during the First Indochina War, bartender Nguyen Van Giang faced a milk shortage at Hanoi’s Metropole Hotel. His solution? Whisking egg yolks with condensed milk into a velvety foam, creating a cappuccino-like treat that became a national icon. Today, his legacy lives on at Giang Café and in our Vietnamese coffee class, where you can uncover this story firsthand.
Crafting Egg Coffee: Tradition in Every Sip
To make Cà Phê Trứng, you’ll need:
- Vietnamese coffee (phin-brewed and bold)
- Egg yolks + condensed milk (whipped into a cloud)
- A touch of patience
At Phin Coffee Restaurant, we add a twist: coconut syrup for tropical richness. Want to master this? Join our egg coffee class in Hoi An’s Old Town garden.
To make Cà Phê Trứng (Phin Coffee Hoi An version) you’ll need:
- 2 or 3 egg yolks
- 1 teaspoon of brown sugar
- 10ml of coconut syrup
- 1 cap of Malibu liqueur (you can skip this if you don’t want to drink alcohol)
- 1 shot of espresso (Robusta beans – medium roast)
Use a hand blender, whip the yolks, sugar & syrup for 3-5 minutes until smooth.
While Hanoi’s classic version is timeless, our Coconut Egg Coffee blends tradition with coastal flair. We whisk fresh yolks with coconut syrup (sometimes we add a little bit of Malibu liqueur) then pour coffee with beans roasted at Phin Lab Roastery on top, creating a creamy, aromatic sip that’s become a signature at our Hoi An coffee shop.
